Russian Omelette, Baked Cafeteria Egg Omelette (Recipe From Soviet Union Period)

Russian Fashion cooking: Baked Cafeteria Omelette recipe.

This recipe is tailored from ГОСТ (set of technical requirements in USSR), so this omelette is from my childhood. It’s a quite common breakfast in Soviet Russians college cafeteria.
They used to make it on large baking trays and lower off the parts with a particular spatula. It was browned on the highest and was not shedding the quantity as soon as on a plate, as often occurs with top-stove omelettes. We known as it omlet (омлет).
The feel is mild and delicate, it makes a really nice Sunday breakfast.
